Ed 'Famous' Recipe for Bass
The "secret" is thin filetes...........I cut the fish into filetes about 3/8" thick...I lightly salt and pepper them....then dust them with Maizena(corn starch), dredge them with beaten egg/milk wash, coat them with Panko (Japanese bread crumbs) and fry in 3/8" canola oil using med/high heat until golden brown...(about one minute/plus per side). We eat them with lemon or lime juice and Tartar sauce.
I do some things with the filetes to prep them, but people would do their own thing in prepping, so this is not important.

Ricardos's Favorite Marlin Marinade:
juice of one lime
equal part olive oil
equal part soy
1 crushed garlic clove
mix all ingredients and marinade for 3-8 hours
Grill on hot BBQ for 3 minutes per side basting once
Coconut and Lime Marlin
Coconut and Lime Marlin
1½-2 pounds marlin steaks
½ cup flour
3 Tbsp canola oil
2 Tbsp ginger, peeled and minced
2 Tbsp shallots, minced
1 tsp curry powder
2 Tbsp lime juice
½ cup coconut milk
salt and pepper
Dredge marlin in flour and sauté using 2 Tbsp canola oil in a large heavy skillet for 3-4 minutes per side until almost cooked through. Remove fish to a platter.
Add 1 Tbsp oil to a pan and sauté ginger and shallot on medium low heat until soft. Add curry, lime juice and coconut milk; simmer slowly for about 5 minutes. Adjust seasoning by adding salt and/or pepper to taste. Add marlin steaks, warm through and serve.
